Nan's delicious lemon cheesecake

What a great way to serve up lemons to fussy eaters. Nan sure thinks so, and this recipe hasn’t let her down yet. We hope your family enjoys this classic dessert too.

This recipe is a Christmas favourite at Nan’s house.

“This has got to be one of our top favourite desserts handed down to me by Aunty Lesley. Everybody goes back for more. This recipe is so easy to make and fast. People think I went to so much trouble to make it — if only they knew.”

BASE:

  • 1 pkt malt biscuits.
  • Melt 140gm butter and ½ cup sugar.
  • Press into tin and leave to cool.


TOP:

  • 2 cartons cream cheese (500gm).
  • ½ cup sugar

Mix with beater.

ADD:

  • 1 pkt lemon jelly dissolved in 1 cup boiling water.
  • Juice of ¼ lemon and zest of ¼ lemon or more if you like it tarty. Stir until dissolved.


METHOD:

  • Mix with cream cheese mix and also add 160ml cream.
  • Beat again.
  • Pour over base.
  • Refrigerate.


NAN’S TIPS:

  • If you really want to get decadent whip up some cream for the top of the cheesecake and sprinkle with lemon zest.
  • If you do not have a round dish a square dish is just as good.
  • Once cold, slice and arrange on serving dish.
